Caviar Perle Noire is a team of enthusiasts and aquaculture specialists gathered around a project of production an excellent caviar. In 1997, Frédéric Vidal founded the Aquadem company, of which he is the Managing Director, and launched the Caviar Perle Noire® brand. Throughout the year, this "artisan-breeder" of Périgord Noir caviar produces one of the best French caviars, at an affordable price. Caviar Perle Noire professionals take the greatest care at each stage of caviar production, from the selection of the alevins to the tasting of the final product, with the greatest respect for the fish.
