The fillets of large trout, after salting with dry salt, are hung in the smokehouse with a string and are smoked for a long time over beech wood. They are then put under vacuum with their string for the greatest delight of connoisseurs. After opening, you can slice it at your convenience into thin slices, cubes or sashimi style depending on your use.
